This is a very special farm because the project started in the village of Tiancai who was a roaster before moving into farm management. As Tiancai's knowledge of specialty coffee has increased, so has his desire to do something unique with coffee on his family's land in Yì Wǔ in China.
Fresh coffee fruits are picked and peeled the same day before the dry fermentation process begins. The fermentation process is generally divided into water fermentation and waterless fermentation. They chose the waterless procedure to have better control.
The fermented coffee pectin will fall off entirely, which usually takes 35-72 hours. When it is confirmed that the coffee fruit has been fermented as they wish, mountain spring water will be injected for cleaning and the use of gravity method will be applied for coffee separation. Coffees with a higher density than water will be preserved and go through the drying process for 12 to 15 days and need to be refined for another 1-2 months before being shelled and graded.
While volumes are still small, Yiwu coffees recently cupped at 85+ and they take a lot of pride in their work to improve and make consistently excellent coffee.
