GAO’S COFFEE ESTATE — SARCHIMOR
From Gao’s Coffee Estate in Menglian, Yunnan, this Sarchimor is a first-production lot from a young planting now entering its fourth year of harvest.
Grown at 1,500–1,700 metres in the mountains of Yunnan, the coffee is cultivated with a strong focus on soil health, sustainable farming, and varietal development. This lot was carefully processed using the estate’s micro water-washed method, designed to capture the clean, delicate character of a traditional washed coffee while using significantly less water.
The cherries are sorted by density and size before being gently depulped and separated into grades. Pulp and discarded fruit are then returned to the farm as natural fertiliser, creating a thoughtful cycle between processing and cultivation.
For this first Sarchimor harvest, the farm experimented with Natural, Washed, and Honey processing across the crop. We chose the Washed lot for its clarity, cleanliness, and delicate expression of the variety and terroir.
A young variety, a careful process, and a glimpse into the future of Yunnan coffee.
Enjoy a beautifully balanced cup with notes of Apricot and Raspberry, delicate hints of Flowers like Osmanthus, and a sweet finish reminiscent of Honey and Oolong tea.
