Cupping Score 85.5

Sourced from Bioma Café, a Cup of Excellence–winning producer in Brazil's renowned Cerrado Mineiro region, this single-estate green coffee is a testament to exceptional farming, technical precision, and consistent quality. Cultivated at approximately 1,200 meters above sea level, this lot combines carefully selected Arabica varieties grown under rigorous agronomic standards, offering a clean, balanced expression of modern Brazilian specialty coffee.

Processed using the pulped natural method, the coffee is depulped before drying while the mucilage remains intact. This traditional Brazilian process allows the fruit's natural sugars to enhance sweetness and body while preserving the clarity and structure that make the coffee exceptionally versatile. The result is a balanced cup with notes of caramel, cocoa, roasted hazelnut, and dried fruit, lifted by a subtle citrus brightness and a smooth, lingering finish. Its dependable structure performs beautifully across a wide range of roast profiles, making it equally suited for espresso blends and single-origin offerings.

What Makes This Coffee Special?

Bioma Café is located in the heart of the Cerrado Mineiro, one of Brazil's most celebrated coffee-growing regions. Defined seasons, abundant sunshine, fertile soils, and a stable climate create ideal conditions for coffee cultivation, allowing cherries to ripen slowly and evenly. These natural advantages produce coffees with remarkable sweetness, balance, and consistency from harvest to harvest.

The farm's commitment to quality has been recognised at the highest level as a Cup of Excellence–winning producer—one of the specialty coffee industry's most respected distinctions. This achievement reflects years of disciplined farm management, meticulous processing, and an unwavering pursuit of excellence.

Founded by Marcelo Nogueira Assis and Flavio Marcio Silva, Bioma Café was established as a long-term specialty coffee project built on technical expertise, sustainability, and continuous improvement. Every stage of production—from cultivation and harvesting to processing and quality evaluation—is carefully managed to ensure complete traceability, consistency, and an authentic expression of the Cerrado Mineiro terroir.

Rather than chasing trends, Bioma Café focuses on refining its farming practices year after year, producing coffees that are reliable, expressive, and true to their origin. Every lot reflects the team's dedication to thoughtful agriculture, precision, and respect for the land.
