Sourced from the award-winning Bioma Café in Brazil's renowned Cerrado Mineiro region, this single-estate green coffee is a reflection of the producer's unwavering commitment to quality, consistency, and innovation. As a Cup of Excellence–winning producer, Bioma Café has earned international recognition for coffees that exemplify the highest standards of specialty coffee.
Cultivated at approximately 1,200 meters above sea level, this lot combines carefully selected Arabica varieties grown under rigorous agronomic practices to express the unique character of its origin.
The Cerrado Mineiro's distinct seasons, stable climate, and ideal growing conditions allow coffee cherries to ripen slowly and uniformly, developing exceptional sweetness, balance, and clarity. Naturally processed and carefully slow-dried, this coffee preserves the integrity of the fruit while enhancing depth, structure, and complexity in the cup. The result is a versatile coffee that performs consistently across a wide range of roast profiles without compromising its distinctive identity.
Founded by Marcelo Nogueira Assis and Flavio Marcio Silva, Bioma Café was established as a long-term specialty coffee project built on technical expertise, disciplined farm management, and continuous improvement. Every stage of production, from cultivation and harvest to processing and quality evaluation, is guided by precision rather than shortcuts. With complete control over farming and post-harvest operations, the team ensures exceptional traceability, consistency, and a faithful expression of the Cerrado Mineiro terroir in every harvest.
More than a single lot, this coffee represents years of thoughtful planning, sustainable farming, and dedication to producing coffees of exceptional quality. It is a modern expression of Brazilian specialty coffee: clean, balanced, and dependable, crafted with respect for the land and a relentless pursuit of excellence.
In the cup, expect a rich, velvety mouthfeel with vibrant notes of Plum, Milk Chocolate, and Cocoa, complemented by delicate hints of Anise and a lingering Panela sweetness that carries through the finish.
